Like Reeses Peanut butter cups, these will keep in the fridge for up to 2 weeks but they won`t last that long!
I haven`t made these yet myself but they are on my to do list for this Christmas.
2 cups smooth peanut butter
1 quarter cup unsalted butter room temperature
1 quarter tsp salt
1 half tsp vanilla
2- 2 one half cups icing sugar
chocolate coating
9 oz semi sweet chocolate chips
2 tbsp shortening
-lline baking sheet with parchment paper or aluminium foil
-place peanut butter, unsalted and salt in a microwavable bowl and heat for 1 mi or until just soft, check and
stir every 20 seconds
-stir the vanilla extract and icing sugar and mix until it has the consistency of a dough ( add more sugar if necessary)
-roll dough into 1 inch ball, place on cookie sheet and refrigerate for about 1 hour or until firm.
-place a toothpich in center of each ball
-melt the chocolate and shortening in a heatproof bowl over a saucepan of simmering water. dip the balls one at a time and make sure the entire ball is coated with chocolate.
-remove from chocolate allowing any excess chocolate to drip back into the bowl.
-place chocolate balls back on the balking sheet
-when all the balls have been dipped place innrefrigerator until the chocolate has set.
-place influted candy cups and store in airtight container.
