happy new year turtles

it will be 2012 in a while so we need chocolate right? well turtles it is...

turtles candies

4 cup pecan piece toasted
14 oz caramels
10 oz chocolate chips
coarse salt for sprinkling optional

preheat oven to 250 degrees

lightly salt pecans and toast on a baking sheet for 25-30 min

while pecans are toasting, melt caramels according to package direction or in micowave

mix pecans into caramels, slightly cool so you can handle

drop by tablespoon size rounds onto buttered or lined baking sheet

if mixture begins to haden, reheat for a few secons at a time in microwave.

let cool

melt chocolate chips in microwave stirring after each 30 seconds

top each caramel pecan drop with 1 tbsp chocolate

let cool

makes 4 dozen

classic eggnog

5 egg yolks
three quarter cup sugar
1 cup heavy cream
2 cups whole milk
1 one quarter cup bourbon or whiskey
one quarter cup spiced rum
pinch salt
1 tsp vanilla
one half teaspoon nutmeg

1-whisk yolks with sugar until creamy and sugar begins to melt

2- addcream, milk, bourbon and rum, stir to combine

3- stir in nutmeg and vanilla and chill well

4- serve chilled on the rocks with a sprinke of nutmeg. yummers

ricardo`s egg nog

ricardo is a very shishipoopoo kind of chef so his list of ingredients is not always on hand in our kitchen. I do like hisdfood however and so I will post his recipe for egg nog as well as a more classic one. we love eggnog at our house!!


ricardo`s eggnog

2 cups milk
one half cup 15 per cent cream
2eggs
one quarter cup maple syrup
2tbsp brandy
2 tsp dark rum
ground nutmeg

in blender combine all except for nutmeg.pour in pitcher and refrigerTE 3-4 hours<

Nutella Hot Chocolate

This is my gift to you all Nutella fanatics!!

3 tbsp nutella
1 1/3 cup milk
mini marshmallows

whisk nutella and 1 1/3 cup milk, in a sauce pan on low heat, increase to medium high and whisk until hot and frothy. add marshmallows. drink while watching a christmas story!! yess!!

lasagna the only recipe you'll ever need!

8 servings

2 onions
1 carrot
1 rib celery
3 cloves garlic
1 lb ground beef or pork
salt and peppa
2 tsp dried oregano
3/4 tsp dried thyme
2 bay leaves
4 1/2 cups crushed tomates
1/2 lb mozzarellA cheese about 2 cups shredded
2 oz parmesan cheese about 2/3 cups grated
1 egg
1 lb 6 oz ricotta cheese
about 2 1/2 cups
1/4 cup frsh chopped parsley
pinch of nutmeg
10 oz lasagna noodles


prep

chop the onions, carrot and celery. mince the garlic. in a large frrying pan, cook the ground beef, onion carrot and celery over medium high heat until the meat is browned. stir in thr garlic and all spices, tomTOES nd 1 1/2 cups water. cook uncovered, stirring occasionally, until thick, 45- 50 minutes. shred mozzarella. grate parmesan. Beat the egg and stir in the ricotta, parse=ley 1/2 cup parmesan, nutmeg, 1/2 tsp salt and 1/4 tsp pepper. cook noodles or use precooked ones ( my preference)

assembly

heat oven 375. spread 1/5 of the sauce in a 13x9 pan. top with 1/4 noodles. spread with 1/2 ricotta mixtire and 1/5 remaining sauce. top with another 1/4 noodles. spread with1/5 ofsauce and sprinkle with 1/2 of the mozzarella. top with another 1/4 of the noodles and the remaining ricotta mixture. spread another 1/5 of the sauce. top with remaining noodles and sauce. sprinkle with mozzarella and parmesan. bake until brwned and bubbling about 35 minutes. let stand 10 minutes before cutting.

cinnamon rolls without yeast

rolls: 2 1/2 cups flour and more for dusting
2 tbsp granulated sugar
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tap salt
6 tbsp melted butter

frosting 8 oz cream cheese
3 cups confectioners sugar
1 tsp vanilla
1 tbsp milk
1/2 cup butter

mix all ingredients until smooth

filling:
3/4 cup pack brown sugar
1/4 cup white sugar
3 tsp cinnamon
1/8 tsp salt
1 tbsp melted butter

preheat over ro 425 degrees- generously coat a 9 inch round cake pan usong vegetable oil spray.
2- make the filling by combining brown sugar, white sugar, cinnamon, salt and 1 tbsp butter until mixture resembles wet sand.

3- make the dough- in a large bowl whisk together flour, white sugar, baking powder baking soda and salt.
4- In a separate bowl whisk the butermilk ansd 2 tbsp melted butter together.

5- stir the buttermilk mixture into the flour mixture with a wooden spoon until absorbed about 330 seconds. the dough will look shaggy.

6-knead the dough onto a floured surface 1 min.

7-press dough into 1 9x12 rectangle using your hands

8- brush the dough with 2 tbsp meltedbutter, sprinkle the dough evenly with the filling leab=vin a 1/2 inch border. press the filling firmly into the dough.

9- loosen the dough from the counter using a metal spatula.

10- starting at a long side roll the dough pressing lightly to form a tight log

11- pinch seam to seal, slice into 8 even pieces

12- place in greased and brush will butter

13- bake 20-25 min

14- use knife to loosen buns from pan and onto cooling rack right side up
let cool, 10 min and frost

I love cooking but i thoroughly dislike having to think of what to make for supper. what with our diverse likes and nutritional needs, its hard to please everyone and to prepare food that they will all eat. There is nothing more infuriating than spending hour in the kitchen and cleanup only to have your near and dear ones scoff at your preparations. Hence the food plan, this is only for my benefit but if it helps you that's great...

Almond Joy brownie bits

Makes 24 cupcakes

1 box of chocolate fudge brownie mix
1- 14 0z can of sweetened condensed milk
1-14 oz bag of shredded coconut
1/4 cup milk
1 tsp vanilla
1 cup chocolate chips
1/4 cup crushed almonds

preheat oven to 350 degrees

prepare brownie mix according to package
pour batter 1/2 way up the cupcake liners
bake 12 min

while they bake, mix coconut, condensed milk, milk and vanilla together

remove brownies and spoon about a teaspoonful of the coconut. return to oven for an additional 14-16 min

remove and allow to cool completely

melt the chocolate chips on low power in microwave for 1-2 min, stirring every 30 seconds

drizzle the melte dchocolate on the cupcakess and top with the crushed almonds.

chocolate mug cake for one

so you crave chocolate cake but you don't want to get out the big guns ... here's the next best thing.. cake prepared in a mug and cooked in the microwave in just 3 minutes, yayyy

4 tbsp flour
4 tbsp sugar
3 tbsp milk
3 tbsp oil
1 egg splash vanilla
3 tbsp cocoa
large microwavable mug

add dry ingredients to mug and mix
add egg and mix
add oil and milk and mix again
add splash of vanilla, mix
place mug in microwave and cook for 3 minutes, voila!

don't worry if cake comes to the top of mug and seems to overflow, just let it rest.
you can use icing or nutella

ok so this is not julia child's version but it will do in a pinch, especially if you don't want to be tempted with a whole chocolate cake lying around the kitchen...

Binnur's Borek

This is a typically turkish phyllo cheese burek that I love and is easy to make...


7 sheets phyllo dough
3 tbsp olive oil
1/2 cup milk
2 eggas
1 pinch salt
2 liter pyrex casserole or other casserols dish. I use a 9x13 baking dish.


FILLING

1 pack 300 grams frozen chopped spinach, squeeze with hands to remove all extra water
1/3 cup crumbled feta cheese
1 onion chopped
1tbsp olive oil salt
black pepper


For the filling

put salt and perrer and onion ina pan and cook 2 min.. add spinach and continue cooking 2 more min.. put aside and add feta cheese.. stir to mix...

in a bowl, mix eggs, olive oil, amd milk with a whisk. this liquid will go between each 2 layers of phyllo sheets... the filling will go in the middle only...

Grease the casserole dish.. place 2 sheets of phyllo dough in the bottom and over the sides of the dish.. spread 3 tbsp of the liquid on top...take another 2 sheets of the phyllo.. fold in half and stack in the dish... spread the spinach filling on top of the stacked phyllo... continue layering this way until all phyllo is used...
then fold the sides of the bottom layer over.. pour remaining liquid on top...

refrigerate 2-3 hours to make it more crispy ..
bake in a preheated 350 degree F over until golden brown 25-30 minutes. bon appetit

Peanut Butter Dog Biscuits

2 tbsp vegetable oil
1/2 cup peanut butter
1 cup water
1 cup whole wheat flour 2 cups white flour

preheat over to 350 degrees F. combine oil, peanut butter and water.. add flour 1 cup at a time and the knead into firm dough,.. roll out to 1/4 inch thickness and cut out into shapes... bake 15-18 min..cool.. feed to Rover,, woof...

Tempura Batter

This is an excellent batter to fry fish or sliced veggies in...japanese style

2 cups flour
2 tbsp baking powder
1/4 cup cornstarch
1 tsp baking soda
2 eggs slightly beaten
1 tsp salt
1 1/2 cup ice cold water

combine well the flour, baing powder, baking soda and cornstarch in a large bowl...

add eggs, salt and water, .. beat the mixture lightly with a fork or whisk until flour us moiatened lumps may appear but don't worry about that...

coat fish and vegies immediately with batter. Tempura batter is best when used within a few minutes after making.. if frying large amounts , make batter in smaller portions...

fry until golden brown

Tobbles, which is a colorful series of bowls that fit into each other at an off angle, cute..

Bug Jug Fill and Spill.. melussa and Doug,, a container or jug and 4 or 5 colorful soft bugs to place in the jug and then to dump out or spill.. might be fun..

what do you think... also a walking toy sounds good right, got to look into that...

Lemon Curd Mousse/ Martha Stewart's

1 tsp unflavored gelatin
1 tbsp cold water
4 large eggs plus 6 large yolks
1 cup sugar
1 tbsp plus 2 tsp finely grated Meyer lemon zest ( from 2 lemons)
plus 3/4 cup fresh Meyer lemon juice, (from 5 to 6 lemons)
6tbsp cold unsalted butter cut into small pieces
1 cup heavy cream whipped

directions
sprinkle gelatin over water, let stand until softened about 5 min.

whisk together eggs and yolks in a small saucepan

whisk in sugar, lemon zest and lemon juice.. cook whisking constantly over med low heat.. until mixture is thick enough to coat the back of a wooden spoon 8-10 min..

remove pan from heat, add gelatin stirring constantly until gelatin dissolves and mixture is slightly cool.. add butter, a few pieces at a timr, stirring after each addition until smooth.

strain thru a sieve into a bowl, pressing with a rubber spatula to remove as much curd as possible, discard any undisolved gelation or egg bits.

press a piece of plastic wrap directly ont surface of curd to prevent a skin from forming and refrigerate until set at least 2 hrs or overnite. Stir curd and gently fold in whipped cream. refrigerate 1 hr. stir before using....

peanut butter pie for mikey

mikey is the dear husband of jennie from in jennieskitchen.com, who died suddenly. the food bloggong community is making these pies in memory of mikey. here is the recipe.

mikey's peanut butter pie

1 1/2 cup graham cracker crumbs or chocolate cookies
1/4 c butter melted
1/2cup semi sweet chocolate chips
1 cup whipping cream
8 oz cream cheese room temperature
1 cup creamy peanut butter
1/4 cup sugar
1 14 oz can sweetened condensed milk
1 tsp vanilla

in a small bowl, stir together cookie crumbs and butter.. press firmly into bottom and up the sides of a pie plate or 9 inch springform pan...

melt the chocolate chips in microwave and pour over the bottom of the crust.. refrigertate while you make the filling...

beat the cream until stiff peaks form.. set aside.. place the cream cheese and peanut butter in a deep bowl and beat on medium speed until light and fluffy.. beat in the sugar,,condensed milk and vanilla, beating until the filling is smooth.

gently fold 1/3 of the whipped creaminto the filling mixture and the fold in the remaining whipped cream and refrigerate for 3 hours or overnight before topping with chocolate and crusted peanuts. 8-10 servings

i am in a dead rush to finish the book "the help" before I see the movie. can't wait, so far an amazing book, get yourself a copy or wait to borrow mine when i'm done..

peach cobbler

like i said ontario peaches are in and so i am in a cobbler mood.. so here is my first find..
1 stick butter melted
1 cup plus 3 tbsp sugar divided
1 cup flour
2 tsp baking powder
1/4 tsp salt
1 cup milk
1 tsp vanilla
3 or 4 ripe peaches, skinned, pitted and thinly sliced
1/2 tsp cinnamon

preheat oven to 375 degrees
pour melted butter in a 11x7 or 8 in sqaure baking dish.. in a mixing bowl, combine,1 cup of the sugar,flour, baking powder, and salt.... stir to blend.. stir in the milk and vanilla util bleded.. pour the batter over the melted butter, toss the peaches with remainibg 3 tbsp sugar and 1.2 tsp cinnamon. arrange peach slices over the batter. bake 25-30 min... the top will be brown and cake will begin to pull away from the sides of the pan. serves 6

other peach cobbler

woohoo, ontario peaches are here so i am going to make us a peach cobbler.. this one looks very rich.. what with cream chesse and all..


12 fresh peaches skinned and thinly sliced
1 cup water
1 cup sugar
1/3 tsp cinnamon
1 18.25 0z white cake mix( calm down, you won't die if you use a mix once in a while)
1 8 0z package of cream cheese
1/2 cup butter

preheat oven to 350 degrees
spred peaches evenly in a 9x13 baking dish. comfine water and sugar in a smal bowl ad stir to dissolve.. then pour over the peaches.. sprinkle cinnamon on top of that.. followed by cake mix... top cake mix with pats of cream cheese, dot with butter and bake for 45min. serve with scoops of vanilla ice cream or cream. yummers

Banana Bread

This is a simple but intense banana bread. No special tools required.

For 1 loaf

3 or 4 bananas mashed
1/3 cup melted butter
3/4 cup sugar
1 egg beaten
1 tsp vanilla
1 tsp baking soda
pinch salt
1 1/2 cups flour

no need for mixer

preheat to 350 degrees

with wooden spon mix butter into the mashed bananas in a large mixing bowl. mix in the sugar, egg, vanilla. sprinkle the baking soda and salt over the mixture and mix in.add the flour last, mix. pour into a butted loaf pan. bake 1 hour, cool. yummmers

cinnamon rolls/biscuits

2 cups flour
4 tsp baking powder
1/2 tsp salt
6 tbsp butter divided
3/4 cup milk


filling

1/4 cup sugar
1 tsp cinnamon
1/4 cup chopped pecans or walnuts

glaze

1 cup powdered sugar
1 tbsp softened butter
6 tsp milk
1/2 tap vanilla extract

preheat oven to 450 degrees

in a large bowl combine flour, Baking powder and salt. cut in 4 tbsp cold butter until it resembles coarse crumbs.stir in milk until just moistened, turn onto lightly floured surface and knead gently 8-10 times.

roll into an 11x8 rectangle about 1/2 inch thick, melt the remaining butter aaaaa and brush one tbsp over the dough. combine sugar and cinnamon and pecans and sprinkle over butter. roll it up jelly roll style starting at the long end.

cut into equal slices, place cut side down in a greased 8x8 pan, brush with remaining butter.

bake for 18-20 min until golden brown, cool for 5 min

combine glaze ingredients ad spread over warm biscuits .. enjoy

jiffy corn meal recipe clone

this is for use in recipes that call for an 8.5 oz box of jiffy corn meal. i have a great recipe for an appetizer that calls for this but cannot find this here, so here it is..

2/3 cup of flour
1/2 cup of yellow cornmeal
3 tbsp sugar
1tbsp baking powder
1/4 tsp salt
2 tbsp veg oil


mix all dry ingredients together, add oil and whisk until all lumps are gone
use in recipe as called for.

Baby Oatmeal and Banana Bars

been searching for a good recipe for teething biscuits for my grandbaby but they had to be sugarless and honeyless as well. babies under one should not be given honey, so here is a real easy recipe...please supervise your little ones when they eat...


1 ripe banana
handful of oats

preheat oven to 350 degrees

grind oats in a food processor

combine banana with enough ground oatmeal to form a sticky dough

divide the mixture into small pieces and press it into the shapes you want or make it into simple bars

bake for 10-15 minutes until golden brown, they will become harder the more they are cooked so if you want a chewier bar do not overbake.

Eggplant Ricotta Bake

I always seem to have food on my mind. I believe that this is indeed building something if not character as I am constantly on a diet. For those of us who belong to the Overeaters Anonymous fraternity food is a constant in our lives. We just have to learn to co-exist! Portion, portion, portion! I truly believe that there is a special place reserved for people who struggle with food addiction in heaven. We will be greeted by saints carrying large platters of brownies and lemonade!

In the meantime something to try:

1 lb ricotta
3 eggs
1 cup grated romano cheese
fresh chopped basil
2 cups marinara sauce
olive oil, salt and pepper
2 large eggplants sliced lengthwise 3/4 inch thick skin on

oven to 450 degrees
brush both sides of eggplant slices, salt ad pepper. roast till tender 20-30 min.
in a bowl, whisk ricotta, eggs, 1/2 cup romano cheese, fresh bsil salt and pepper.

brush bottom and sides of an 8x8 casserole.
place 1/4 of eggplant down, spread with marinara, more eggplant, half ricotta mixture, repeat everything ending with ricotta on top. sprinkle with cheese ND BAKE 25-30 MIN.
cool 15 min so it is easy to cut.

when I double this I bake in a 9x12 pan

Chocolate Bottom Banana Bars

1/2 cup butter
1 cup sugar
1 egg
1 tsp vanilla
1 1/2 cup flour
1 1/2 cups mashed bananas (3 medium)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 cup cocoa
1 cup chocolate chips

In a mixing bowl, cream butter ans sugar, add egg, vanilla and bananas, beating thoroughly.

In a separate bowl, combine flour, soda, baking powder, salt. Add to creamed mixture and mix well.

Divide batter in half.
Add cocoa tom one protion of batter.
Spread that portion in the bttom of a 9x13 baking dish.

Spoon remaining batter on top., swirling gingerly with butter knife and sprinkl with
chocolte chips.

Bake for 30 minutes at 350 degrees. Cool and cut into 24 squares.

quick vegetarian

6 leeks cut lengthwise and  chopped  set in water to remove soil

2 cans od drained and rinsed chickpeas

1 1/2 cup of chicken stock
olive oil
2 tsp curry
2 tsp tumeric

salt and pepper to taste

place washed leeks in a large pot with a slurp of olive oil
on medium high heat, stir  in spices add stock and chickpeas and lower heat to simmer  and cook for 20-25 minutes, watching  that it doesn't run out of liquid.

Meanwhile cook some basmati rice or your favourite rice, be it brown or white.

When chick peas are soft, remove from heat and serve over the rice.

You can adjust the spices to your personal preferences, I like spicy Indian cuisine so the spice amounts are great for me but you may want to go easy and do a test before you add more...

pear phyllo tart

8 or 9 phyllos sheets
1 stick butter melted , no substitutes
1 cup toasted  finely chopped pecans or walnuts
2/3 cup plain breadcrumbs
2/3 cup sugar
2 tsp cinnamon
1 pear  or apple finely slice, use mandolin
parchment paper

preheat over to 400

line baking sheet with parchment paper


in a small bowl mix chopped pecans, sugar, cinnamon and breadcrumbs together and mix

place one sheet of phyllo on bake sheet, brush with melted butter and  spinkle some pecan sugar mixture , eveny.
place another sheet and repeat precedure until last sheet of phyllo

add sliced pear
brush with butter and sprinkle with additional sugar

bake for 20,min 

cut when warm , being careful not to tear

short

abby scurried around trying to pack as many of her clothes as possible in the shortest possible time. she had just accidentally read an incomming text on jeffs phone that confirmed payment was received for services to be rendered. what services she wondered and was afraid to guess. her husband had been acting unusually irritated with her and since the marriage was on a downturn recently she did not know what to think. why did she always think the worst? she had been watchnig too many episodes of 48 hours  when she would stay up late at night waiting for her son to come home fron a friends house.jeff  had been married  and divorced before she had meet him at a pep rally for congressman  jack devereaux.  his wife had died in a car accident  three years earlier, which upon investigation was deemed suspicious but findings had been inconclusive. jeff was not considered a person of interest. abby had always been unsure of herself as a young teen and things had not changed much at college in williamstown, where everyone was someone, everyone's parents owned horses and were members of the country club. she felt very uninteresting and dull and the only boy she dated came out of the closest while in her third year of college. she had been devasted. she had trusted the boy and had flowered under the undivided attention he gave her. she now guessed that it had been a ruse to keep the inquisitive at bay. sure they had sex and he was very tender, almost too tender. wow she sure  knew how to pick them. ok quick now, jeff was still in the shower and she had  time to get the emergency money she kept hidden in her tampon box in her closet and get out of the house.

ski trip

my son chris is on a ski trip with his peeps, as he calls them, his best budds. chris does not know how to ski, more importantly this is the first time he is away from home without any adults, like a school trip etc. so mama is quite nervous, add to the mix that the peeps are driving themselves to their destinationin . thankfully all the young men are responsible young people and they all know how to drive and follow the rules of engagement so to speak. yea but i worry about all those other yahoos out there driving on our quebec roads who don't even stop at the stop signs. those who are still drinking and driving, what am i supposed to do with all this worry. well the kids will have fun that's for sure but mom has to learn to let go, we have had many many talks chris and i on a variety of subjects and he is such a smart and funny young man and he knows i would kill him if he did something to endanger his life.  we have to let our kids fly on their own, wow, that is hard to do.

ok you grandmas out there! i have found a blog that has a pattern for get this, a crochet elmo and cookie monster! yyaaay!! guess what i'll be doing soon as i get my hands on some red yarn!the carpet in the den is full of white cat hair and the natives are restless as i am on a crochet bonanza, made three hats, for a friend's grandbabies and not getting anything else done. this is the blog for the elmo and cookie monster patterns http:/a-crochet-ninja.blogspot.com  

the cookie monster one is done with the hairy yarn, so if you mess us you can not undo it, forwarned is forearmed as they say, did i get that right? so i am very excited. also does anyone know where i can get a variety of yarn on the south shore other than zellers?  i am thinking they would make great projects for the childrens hospital, yeeha i am so happy about this find. my grandson already has two elmos but i think one more elmo is in order, making it the 3 elmos, like the three tenors, yess!

my favorite carrot soup

8 carrots
8 potatoes
8 shallots
olive oil , salt and pepper
8 cups of chicken broth

peel carrots and potatoes and cut up into 1 inch pieces
clean shallots and cut into thirds
place in roasting pan and toss with olive oil, and season,
bake at 400 preheated oven for 40 minutes.

when vegies are tender place in food processor and blend until smooth, add to chicken broth, warm up and eat! how easy is that!

discoveries

I found this face cream called "super magic BB cream" from korea. It is amazingly smooth, I would say smoother than any other cosmetic  foundation out there.the bb stands for blemish balm, it was intended as a post operative cover up of the redness that comes with face peels and also blemishes that become inflamed.this cream only comes in cream no 21 and beige no 23. I have found that the cream is too white for all over face foundation but I have found that you can use it around the eye area and it goes on smooth and prepares the eyes for shadow and also adds light to the mature eye area! I use no 23 for the rest of the face.it it foundation ad moisturizer and spf as well and the best of all it covers well and is not greasy and does not settle into the lines of your face and get all powdery like. I get it through ebay.. it also goes by the name Missha bb cream/ check it out for yourself.

comfort gnocchi

my favourite gnocchi recipe

1/2 lb baking potatoes
1 1/2 cups to 2 cups flour
1 tsp salt
1 lagre egg well beaten

1-boil potatoes until fork tender but do not let skins split, about 30 min
2-remove skins while still hot

3-push through ricer and let cool on balking sheet spread out and sprinkle with  the salt.
4-after about 20 min when potatoes have cooled add the egg and mix together  then add 1 cup of the flour and mix until flour is absorbed but not too much as over kneading  will toughen the gnocchi, if needed  ( if dough is still too sticky to handle) add a little more flour and knead just until mixed

5-divide the dough into 3 equal parts and then divide each part in two again and roll to about 12 inches and cut into pieces of 3/4 inch
shape into gnochhi by rolling onto a fork to get the indented lines that will hold your pasta sauce!

Cook immmediately or flash freeze
when ready to cook the frozen gnocchi use more water than usual and cook in small batches so they do not stick.
sprinkle freshly grated parmesan
this recipe yields about 70 pieces
