quick fix

still so much to do in preparation for the holidays including still more baking, some errands  house cleaning, the cats are bored being inside and  getting into trouble pawing the bows on the christmas presents, uugghh, the meringues turned  out great but too big. sleepover poker on tomorrow, so i need something fast but still healthy for supper. i opt for quick fix quesadillas

-quesadillas

-1 rotisserie chicken
-multigrain tortillas
-green chilies
-tex mex grated cheese, or grate your own cheddar and add a few teaspoons chili powder ( its cheaper and i always seem to hand extra packet of chila powder and cheddar on hand)
-salsa
- 3 large  onions sliced and sauteed til golden
-optional
guacamole
sour cream

shred chicken
add to one side of the tortillas
add salsa
add cheese
add sauteed onions
fold tortilla in  half
heat the frying pan to med high and cook folded tortillas for a few minutes on each side until warmed well throughout and cheese has melted.

serve with guacamole or sour cream and a salad

with all the quasi frenzy of things that still need to be done i have this urge to start a crochet granny blanket i saw on a blog that i follow" attic  24 crochet" it is amazing. crocheters check it out you will not be disappointed.  it is a gloriously colored affair and so easy to do, the colors just cheer me up... there is truth to color therapy... my christmas tree is decorated with ornaments of varying shades of pink, rose and mauve and it makes me feel happy.some are dollar store finds, some are martha's, a mix really. so treat yourself, if something makes you happy and you can afford it, go for it.
