Raspberry Almond Squares & Chocolate Marshmallow Balls

this is a to die for confection, really easy, I just adore when recipes are easy and turn  out well each time, I don't have Martha's staff and I tire easy these days, so it has to work bang on right away. Many have requested this one so here it is.

bake two different kinds of squares in two different pans at the same time by doubling the crumb ingredients and using two different kinds of jam for the fillig. Apricot, cherry, strawberry or pineapple wpuld be a delicious alternative to raspberry.

1 1/2 cups flour
1 tsp baking powder
1/4 tsp salt
1 cup lightly packed brown sugar
3/4 cup butter
1 1/2 cups rolled oats
1 1/4 cups raspberry jam
1/2 cups sliced almonds

Stir together flour, baking powder, salt and sugar. Cut in butter until mixture is crumbly, stir in
oats. Press 2/3 of the mixture firmly into a greased 13x9 inch pan. Spread evenly with jam.
Stir almonds into remaining crumb mixture. Sprinkle evenly with jam patting dow ligjtly. Bake in 375 degree oven for 30- 35 minutes or until golde brown. cool in pan on wire rack. \makes aboit 28 squares more if you cut them smaller.

Chocolate Marshmallow Balls                   

A chocolate lover's fantasy comes true in these quick to fix confections that don't need baking. Balls of creamy chocolate studded with tiny marshmallows are rolled in a coconut coating. They keep several weeks so you can prepare them early.

4 oz cream cheese
2 tbsp milk
2 cups sifted icing sugar
2 oz semi sweet chocolate chips melted ( microwave works great)
3 cups miniature marshmallows
shredded coconut
wax paper

Beat cheese and milk until smooth. Gradually add icing sugar and chocolate. Mix well, add marshmallows, stirring to coat with chocolate mixture. Drop by small spoonfuls into
 coconut, Toss until coated Place in pan lined with wax paper. Chill until firm. Store covered in refrigerator. Makes about 50 balls

I haven't tried these myself yet, but they sound yummmy and I am thinking I could add some chopped walnuts to these and they would be awesome.
