cream cheese and bacon stuffed mushroom caps

8 oz softened cream cheese
6 strips bacon, fried and crumbled, reserve fat
1 small onion finely chopped
25 large mushrooms stems removes
8 mushroom stems finesly chopped.


line a baking sheet with parchment paper, preheat overn to 350, remove stems from mushrooms
place o baking sheet flat side down and bake for 8 minutes. this serves to revove excess moisture from the mushrooms so they are not mushy!!

next saute onion and mushroom stems in bacon  fat until tender.drain off excess fat, mix brumbled bacon, onion&stems with cream cheese until mixture is workable.
fill the mushrooms and bake at 350 10-15 min

finish under broiler until tops are golden.

you may want to add some minced garlic and or bread crumbs to the mixture, it's up to you. I would make a double batch as they go very fast!
