struffoli

this is favourite neapolitan  treat made at christmas but it is also made throughout the year ... a favorite with children

serves 6-8

6 eggs
1 cup sugar
4 cups flour 1 tsp vanilla
2 tsp baking powder
oil for frying

topping

a mixture of cinnamon and sugar or
warm honey and candy sprinkles

put the flour into a mound on a clean counter. make a well in the ceter and put the sugar, eggs, vanilla, baking powder, and cinnamon into this well.

using a fork begin to mix everything together by pulling the flour slowly into the egg mixture.nce everything is well mixed, form the dough into rolls about the width of your thumb, cut each roll into 1 ich pieces. shape into balls,
fry the struffoli in oil heated to 375 degrees F until golden7 puffed.rain on paper towels ad top with choice
of cinnnamon sugar or honey.
